The much-awaited Conrad Manila’s Legendary Chefs Series kicked off on April 12, this time, bringing in one of the most desired and popular cuisines worldwide, the vibrant and authentic flavors from the Royal Kingdom of Thailand.

Featuring Chef Akkawin “Pun” Pitrachart from Waldorf Astoria Bangkok, Chef Pun’s signature creations are to be enjoyed by guests from April 12 to 30, giving a scrumptious treat be it through a lunch or dinner dining experience at Conrad Manila’s Brasserie on 3.

The ribbon-cutting was graced by Nictor Reyes from the Office of Pasay City Congressman; Elizabeth Sy, President of SM Hotels & Conventions Center; Thai Ambassador to the Philippines H.E. Tull Traisorat; Chef Akkawin “Pun ” Pitrachart from Waldorf Astoria Bangkok; and Mr. Fabio Berto – General Manager of Conrad Manila. 

During the official ribbon-cutting ceremony, guests were welcomed with a lemongrass mint tea with pandan drink, a perfect refresher before digging into the Thai food selection at the buffet! 

Chef Pun showcased a mini masterclass of “Khao Soy Gai”’ also known as Northern Yellow Curry Soup to the media during the launching. 

Explore a diverse selection of scrumptious viands, including Deep-Fried Sea Bass with Sweet Chili Sauce (Pla tod rad sauce sam rod); Northern Thai Sausage (Sai-ua); and Stir-fried Minced Pork (larb kua). These signature dishes, with bursting authentic flavors, undeniably capture the essence of Thai cuisine. 

In an interview with THEPHILBIZNEWS, Chef Pun described Thai cuisine as “spicy, refined, and flavorful”, highlighting how all the ingredients used have their unique take on flavors particularly “dry complexity of spiciness”. 

The foods showcased come from the Northern part of Thailand ingredients and sauces. The chef also explained the difference between South and Northern parts of Thailand. According to him, the South uses more fresh chili in their food while the North uses more of peppery flavors to balance spice levels.

For a healthier option, a wide array of salads can be chosen such as Yam Woon Sen Talai (Glass Noodle with Mixed Seafood), Yam Makeua Yao (Eggplant), Yam Sam – O (Pomelo), and Yam Pla Duk Foo (Catfish). And of course, no buffet experience is complete without desserts like Mango Sticky Rice, Red Rubies, and Sticky Rice Balls with Filling.

Chef Pun is currently the Chef de Cuisine at the Front Room, leading with a consistent delivery of the Taste of Waldorf Astoria — introducing new culinary creations, bringing innovation and excellence to the dining experience. 

Aside from having close ties through food, Thailand and the Philippines are similar in terms of culture and values, with friendship being cherished with 75 years of diplomatic ties.

“It’s my first time here in the Philippines – in Manila. When I arrived, I felt like I was still in Bangkok. The people and the lifestyle are the same; it’s not different from Thailand. [I can feel] the vibrant and warmheartedness of people,” said Chef Pun.
