Wondering what restobar to try next in BGC? Include Uma Nota in your list!

After captivating the palates of diners from Paris and Hong Kong, Uma Nota goes to Manila, marking a grand entrance at the Shangri La, The Fort, Bonifacio Global City.

Showcasing the harmonious blends of Brazilian and Japanese culinary traditions, Uma Nota brings forth rich weaving tapestry seamlessly together through a unique dining experience, seductive and vibrant atmosphere, and striking flavors on each dish from the menu.

Drawing inspiration from the historical migration of the Japanese to São Paulo, Uma Nota brings forth a creative testament in an alluding vicinity, having both the precise style of Japanese nature and Brazilian’s coruscating culture.

Co-founder Alexis Offe shared that Uma Nota Manila will not only be a venue but a destination for guests who are seeking a thrilling blend of entertainment, design, and immersive experience.

“Uma Nota has always been a celebration of cultural harmony, a symphony where Brazilian and Japanese influences dance together. Our journey into Manila is more than just an expansion; it’s an immersion into the rich tapestry of flavors and experiences unique to this vibrant city,” Offe said, emphasizing on the promising dynamic location with an elevated and extraordinary experience to customers.

Uma Nota’s Four Realms, designed by Asmaa Said (Founder of Odd Duck):

The Living Room with a striking ‘Hanging Tree’ installation
The Bar which eludes an intimate social atmosphere
Tropicalia – a tribute to 70s Tropicalia movement
The Meiji Room filled with Japanese murals that honors the mass migration

Speaking to THEPHILBIZNEWS, Amir Borsok and Michael Needham explained that the hanging tree installation is a real and preserved tree, which gives a space of bringing down the ceiling a little bit.

During an intimate dinner last Friday, The “Red Flag” and the “Kyoto Sour” cocktails were some of the flavors I tried. Kyoto Sour consists of Atago No Matsu sake, grapefruit, green Tabasco, lemon, and agave. Its sharp flavor may feel new to one’s preference, yet every sip gives a satisfying refreshment with a tangy aftertaste. A must-recommended drink to single ladies out there this summer season!

On the other hand, my personal favorite, Red Flag, has components of Arette tequila, Mancino Rosso Amaranto, Mezcal Durango, raspberry chili syrup, and togarashi rim. What’s interesting about the red flag drink is that it exudes a strong personal approach to the customer — with an instax film shot — giving a glimpse of nostalgia, fervor, and determination all in one. Aside from the intricate details surrounding the glass, the great blend of bittersweet taste of Red Flag drink is perfect for those free-spirited individuals, brokenhearted people, or simply strong & independent women out there.

Indeed, each dish has also combined premium and flavorful ingredients, lingering from the taste buds to satisfying the stomach’s cravings. For vegetarians, the enticing Berinjela offers a unique twist.

Furthermore, Executive Chef Gustavo Vargas highlighted that they’ve been collaborating with Manila Head Chef Kyle Ureta, “To create dishes that bring together the bold flavors of Brazilian and Japanese cuisine while catering specifically to the local palate.” This is to ensure the best quality of a menu that will cater to every palate, whether you like it raw, from the wok, grilled or baked.

“In a city known for its diverse food scene, we’re confident that our menu, crafted in harmony with local influences, will offer a delicious and unique dining experience,” added Vargas.

From the delectable selection of appetizer rolls, scrumptious A4 Kumo-Oh Japanese wagyu striploin, and the oozing matcha layered cake, prepare for a gastronomic Japanese-Brazilian journey filled with a fiery-umami kick, zest in every bite, and irresistible fusion of sweetness and creaminess with Uma Nota!
