A New Zealand–born culinary leader with nearly three decades of international experience across Australasia, Southeast Asia, and the Middle East, Chef Ensor brings disciplined craftsmanship, contemporary flair, and a globally informed, ingredient-driven approach to the hotel’s dining programs.
Chef Ensor has held senior leadership roles in highly competitive luxury dining environments, overseeing award-recognized restaurants and managing large, multicultural kitchen teams. His culinary philosophy balances refined technique with accessibility—drawing from global influences while remaining grounded in seasonality, local produce, and clarity of flavor.

As he takes the helm of the hotel’s overall culinary direction, Chef Ensor introduces his first major initiative at Cucina with the launch of The Crafted Table, a new semi-buffet concept debuting on January 19, 2026. Available for lunch and dinner from Monday to Wednesday, the concept reflects his belief in elevating comfort through balance and craftsmanship.
Guests begin with a curated spread of cold selections, soups, and freshly baked artisan breads, followed by an à la minute main course. The experience can be further elevated with premium dessert options and optional beef upgrades—offering flexibility while maintaining a clear culinary focus.
The introduction of The Crafted Table marks a confident evolution for Cucina, aligning with modern dining preferences without compromising culinary integrity.
