Belmont Hotel Manila highlights the richness of Ilonggo cuisine in the third edition of its Pamana culinary advocacy, featuring the heritage-driven dishes of guest chef Chef Rey Parreño II.
Unveiled during an intimate media gathering at Café Belmont, the latest Pamana collaboration underscores the hotel’s commitment to preserving Filipino food heritage through heirloom recipes, regional flavors, and culinary storytelling.

Chef Rey, a staunch advocate of traditional and contemporary Ilonggo cooking, presented signature dishes inspired by Panay Island, including Bordon Mechado, Piangang Manok, and Inadobadong Apahap—each reflecting the depth, memory, and regional identity of Filipino cuisine.
Guests may savor Chef Rey Parreño II’s featured dishes through the Pamana Weekend Dinner Buffet at Café Belmont, available every Friday and Saturday from 6:30 PM to 9:30 PM, priced at ₱1,700 per person.
