Recently, this writer, along with Biyaheng South participants, had a wonderful experience bound by a culinary feast, the taste of culture, and shared camaraderie.

Recently, the Biyaheros had the honor to try their Lakbay Lokal Buffet, serving the following:

Batangas Bulalomi – a hearty fusion of Batangas bulalo and lomi noodles.

Sisiglaw Salad – a refreshing salad in patis, vinaigrette, topped with sisig.

Kare-kare Bagnet – crispy bagnet in creamy peanut sauce with vegetables and bagoong.

Manok sa Pandan – pandan-wrapped chicken thighs with sweet chili sauce.

Inadobong Pusit sa Gata – soy-vinegar squid simmered in coconut cream topped with roasted garlic.

Embotidong Talong – stuffed eggplant with egg, ground pork, and bell pepper.

Pasta Kabitenyo – pasta with longganisa bits, tinapa flakes, malunggay, and kesong puti.

Siglo Turon & Pinyakendi – crispy roll of banana ube, macapuno, and langka slices.

Brown Rice Latte – Toasted brown rice with milk and muscovado sugar.

The top pick? Inadobong pusit with gata. The dish is simple, yet the rich, creamy umami of squid ink, paired with perfectly cooked squid, elevated it to a top-notch experience. It’s like having a taste of home all the way from Mimaropa (Region IV-B).

The Brown Rice Latte was also commendable, a great integration of Cordillera Mountain region’s brown rice and Negros Occidental’s (Region VI) muscovado to a delectable drink. It seems to be our local version of “horchata” – mildly sweet, creamy, and undeniably refreshing to the last sip. Nonetheless, everything served was scrumptious.

There’s a story behind every dish, a region, and a curated recipe passed down through generations. And Siglo Modern Filipino showcases every cuisine with a creative twist, where guests savor the experience – warmly embraced in the cool heart of Tagaytay.
