<p>The experience begins with Halibut in Taro-Based Sinigang, a refined take on a Filipino favorite. The seared halibut rests on a bed of cauliflower purée and sinigang sauce, with daikon fondant, pickled okra, kangkong lavash, and tomato oil adding layers of flavor and texture. It pairs beautifully with San Miguel Premium All-Malt, whose full-bodied balance enhances the dish’s bright tang and comforting depth.</p>

<p>Next is the slow-braised Pork Belly Adobo, glazed in adobo reduction and topped with fried garlic for crunch. The tender pork and smooth pomme purée are perfectly matched with San Miguel Super Dry, its crisp, clean finish cutting through the dish’s rich flavors.</p>

<p>The French-cut Pork Chop follows — brined for six hours, pan-seared, and oven-roasted to lock in succulence. Served with mustard and M1 sauce, it pairs harmoniously with San Miguel Cerveza Blanca, whose refreshing mix of spicy, smoky, and fruity notes lifts every bite.</p>

<p>The Philippines’ culinary scene gained international recognition with the launch of the Michelin Guide’s inaugural selection for the country, marking a milestone for Filipino gastronomy on the global stage.</p>



<p>Unveiled during the MICHELIN Guide Manila and Environs | Cebu 2026 ceremony held on October 30 in Pasay City, the event showcased the country’s diverse dining landscape and culinary talent. The Department of Tourism (DOT) said the recognition reflects the creativity, heritage, and hospitality that define Filipino cuisine.</p>



<p>Tourism Secretary Christina Garcia Frasco described the occasion as a celebration of the Filipino people and their enduring strength, saying it highlights both the nation’s flavors and spirit.</p>



<p>For its first Philippine edition, Michelin inspectors evaluated 108 establishments across Metro Manila, nearby provinces, and Cebu. Helm, led by Chef Josh Boutwood, earned the country’s first two Michelin stars. Eight restaurants received one star, 25 were awarded the Bib Gourmand distinction, and 74 were listed as Michelin Selected.</p>



<p>Michelin Guide International Director Gwendal Poullennec praised the new generation of Filipino chefs for shaping a cuisine that is modern yet deeply rooted in tradition, and for bringing the warmth of Filipino hospitality to every dining experience.</p>



<p>The DOT said the recognition strengthens the country’s position as a growing culinary destination in Asia, supported by ongoing initiatives such as the Food and Gastronomy Tourism Roadmap 2025 and the Philippine Eatsperience program.</p>
